In Pitalito, located on the southern part of Huila, Blanca Rubys and her husband Victor Felix reside at one of their farms, Los Cachingos. Blanca grew up in a coffee farming family, where she learned about coffee and eventually met Victor Felix, with whom she shared the passion for coffee and married. Since 1987, they have been on a long journey in coffee production and have delved into specialty coffee since 2019. At their farm, Blanca and Victor work closely with their daughters and sons as a tight family unit. Each family member has specific tasks and responsibilities related to the farm. Coffee is what unites them and has helped them grow to where they are now. Today, they are well-known for their high-quality coffee and have placed highly in coffee events such as the Cup of Excellence 2022.

Blanca is constantly motivated by her family's growth overtime and achievements. With all their children involved in coffee, she feels proud of what they have accomplished together. At the farm, to produce washed coffee, it begins with the cherries selectively handpicked and taken to the wet mill on the farm. There, they are left in a container for 24 hours to undergo in-cherry fermentation. Afterward, the cherries are pulped without water and placed in a traditional tank with a small amount of water for a 48-hour fermentation period. The coffee is then washed and packed in porous bags, which are left to drain for 12 hours to remove any excess liguid. Next, the coffee is spread out on covered patios and raked daily to ensure even drying. Drying takes approximately 15 to 18 days. Once the coffee is dried, it is packed in GrainPro bags and stored on the farm for several days before being taken to Caravela's purchasing station.
