Located within the Sierra Madre mountains, near the Chiapas biosphere reserve, Finca Miravalle benefits from unique microclimates that enhance coffee quality. Rodulfo Santizo, who acquired the farm in 1983, has grown it from 0.5 to 5 hectares. His family plays an active role in farm management and post-harvest processes. The main harvest occurs from September to December, with a secondary harvest (Mitaca) between February and July. Drying is done under canopies or solar tents during the main harvest and on patios for 18 days during Mitaca.
