After the birth of their son Neydan, they decided to focus more seriously on specialty coffee, looking for ways to improve both quality and the future of their farm.\u003c\/p\u003e\n\u003cp\u003eIn 2019, they began working with the varieties already planted by their family. When their first harvest didn’t meet their expectations, they changed their approach, experimenting with processing and investing in better infrastructure. Since then, Norica and Gary have continued refining their work at Don Gary, a four-hectare farm with one hectare dedicated to coffee.\u003c\/p\u003e\n\u003cp\u003eSitting at 1,858 metres above sea level and bordering virgin forest, Don Gary benefits from a distinctive microclimate.
