Las Casitas sits in the hills of Chalatenango, a farm shaped as much by family history as it is by the land itself. Owned by Jaime Deras, the name is a nod to his childhood and his grandfather, who first brought him into coffee. That connection still runs through everything he does.
Over time, Jaime has shifted his focus toward specialty coffee, refining how the farm approaches quality at every stage. Cherries are carefully selected, fermentation is adjusted depending on the process, and drying happens slowly on raised beds. The goal is consistency, clarity, and coffees that feel considered from start to finish.
The work here is collective. Jaime’s team plays a huge role in what Las Casitas produces, and the farm continues to create steady employment in the area. Even with ongoing challenges like limited labour, there’s a clear push toward improving both quality and long-term sustainability.
