This Honey lot was harvested in early March with one clear goal: exceptional quality from tree to cup.
Pickers were paid higher wages to ensure only perfectly ripe cherries were selected directly from the branches. The farm follows a tailored nutrition plan aligned with the YARA programme, supporting the long-term health and productivity of each coffee tree.
After harvest, the cherries were floated in clean water to remove defects, selecting only the densest fruit. The coffee was then depulped and left to ferment in its natural mucilage before being carefully sun-dried on patio. Once dried, the parchment was rested in a dedicated warehouse under controlled conditions to preserve quality and structure.
A Family Legacy
Rancho El Separo is a family-run farm built on tradition and intention. The land was first planted with coffee by Senén’s grandfather, who named it El Separo. His son, Zenén, continued the work. Today, Senén and Monika represent the third generation caring for each tree with deep respect for both heritage and innovation.
In 2021, they stepped into the world of specialty coffee, driven by a desire to experiment and bring new expression to their family’s legacy. Since then, they have been refining processing methods and exploring new dimensions of flavour. Their work has gained recognition, including acknowledgement in the 2024 Cup of Excellence.
Farming with Intention
Coffee at El Separo grows under natural shade from native trees. The team avoids herbicides and prioritises biodiversity, committing to agroecological practices that protect the surrounding environment.
This is more than a business. It is a way of life.
The recent arrival of their baby has added even greater meaning to the farm’s future. She represents the next generation, the continuation of everything they are building, and the reason they approach each harvest with care and long-term vision.
Today, Rancho El Separo is supported by a growing team who share these values. Together, they are building something lasting, rooted in family and looking forward with intention.
