High up in Dipilto El Volcán, Nueva Segovia, you’ll find Doña Rosa tending to Finca La Lima, named after the sweet lime tree that once grew right where her coffee now thrives. She’s been growing coffee for more than two decades, and for the last 20 years she’s dedicated herself entirely to specialty. For her, it’s not just about chasing higher prices, it’s about the pride of creating something truly exceptional.
She runs the farm alongside her son, Erling Montenegro, who looks after the logistics and fieldwork while she keeps a close eye on every detail. Their process is classic and considered: a washed method with 30 hours of dry fermentation, followed by slow drying on African beds. The farm sits under an agroforestry system of Inga shade, with Catuai making up around 70% of the crop.
Consistency is her biggest challenge as she holds herself to a high standard. Doña Rosa credits her success to the love poured into every step, backed by the farm’s ideal altitude and climate. Her dream? To keep growing great coffee without ever compromising on quality.
