Norica Perez Vargas and her husband Gary have been involved in coffee since they were young, growing up in Combapata, where coffee is an important part of the local economy. After the birth of their son Neydan, they decided to focus more seriously on specialty coffee, looking for ways to improve both quality and the future of their farm.
In 2019, they began working with the varieties already planted by their family. When their first harvest didn’t meet their expectations, they changed their approach, experimenting with processing and investing in better infrastructure. Since then, Norica and Gary have continued refining their work at Don Gary, a four-hectare farm with one hectare dedicated to coffee.
Sitting at 1,858 metres above sea level and bordering virgin forest, Don Gary benefits from a distinctive microclimate. Norica and Gary continue to invest in their processing and infrastructure, building on what they’ve learned each harvest and steadily improving the quality and production of their coffees.
